This large, erect cactus is almost as iconic to the Southwest as the Saguaro. Organ Pipe Cactus is characterized by its stems which branch at the base to form multiple columns, and has been prized by Native Americans for its large, delicious fruit. Native Americans know the Organ Pipe Cactus as Pitahaya, and in Mexico, the fruits are made into a candy called pitahaya dulce.
